Spicy tomato spaghetti

Ingredients
- 200g wholemeal spaghetti
- 1 tbsp rapeseed oil
- 1 large orange pepper deseeded and diced
- 2 large garlic cloves, finely grated
- 2 tbsp harissa
- 200g whole cherry tomatoes
- 15g fresh basil, chopped
- 25g pine nuts, toasted
Method
- STEP 1
Cook the spaghetti according to pack instructions. Meanwhile heat the oil in a large pan and fry the pepper for 5 mins until softened. Stir in the garlic, then spoon in the harissa and stir well. Tip in the tomatoes then cover the pan and cook on a low heat for 10 mins until the tomatoes are on the point of collapse, about 10 mins.
- STEP 2
Drain the spaghetti once cooked and toss with the tomato mixture until well coated, then add the basil and pine nuts and toss again before serving.
